We have been selling Japanese Knives at our retail Shop in Wolfville NS and our seasonal outlet here in Cape Breton since 2017. For the website we chose our best-selling knives.
Japanese knives are renowned for their sharpness and ease of use. Our selection of knives is made with varying types of steel from aogomi #2 blue carbon steel clad in stainless steel found in the Fujimoto Nashiji collection to the SG2 steel found in the Miyabi line. The high tech SG2 steel is super hard and was originally designed as a tool steel.
The Japanese are well known for their exquisite design and craftsmanship. Many of their knife making techniques were inspired by their history of sword making. The city of Seki where the Miyabi knives are made was famous for its sword smithing up until the mid 19th century.
